Sourdough : the soul of the bread

Sourdough is an active mix of flour and water in which natural fermentation occurs. It is filled with the micro-organisms naturally contained in air, water and flour, which have a magic ability to make dough rise. All they need is that factor which is the hallmark of the baking profession: time.
